His ambition is to have the freedom to experiment, amalgamating his own unique knowledge and perspective on Asian cuisine with his modern and bold approach.
Theo is all about service, his experience with some of the best brands in South Africa and Europe has culimated in a unique management style, with a huge focus on training and development, he believes in efficient but personalised service and creating relationships with his guests.
Julian brings to Wakame his own distinctive character and flair with drinks that are as theatrical, as they are stimulating to the senses. Julian spent a lot of time discovering the world and its many wonders, particularly in East Asia and Australasia and has worked in a wide range of Asian markets, which is where the inspiration for his bar programme at Wakame derives.
